Need you to help me be creative - re: BBQ Chicken Bowl

I am working on my meal prep for next week and I am going to make a BBQ chicken bowl with some shredded BBQ chicken. I want to put it on top of a veggie rice. I am thinking about adding zucchini, corn and green onion to the rice to "veggie" it up. But, I need help pulling it together. How should I flavor the rice to complement the BBQ sauce (I would probably use some sweet baby ray's)? Do you have better suggestions for veggies that go well with BBQ sauce?
Should I ditch the rice and do a roasted potato/veggie combo instead?
Normally, I am more creative than this, but my brain isn't cooperating today.

I love red pepper -- raw, roasted, or sauteed with BBQ sauce.

I like red onion over green onion. I make a bbq chicken salad on romaine with corn, black olives, black beans, red onion, and English cucumber. I am a tomato hater, but most salad eaters would add those, also. I mix bbq sauce with Bolthouse creamy garlic dressing and shake it/coat it all over the salad.
Not sure how this would work on rice, but it definitely works great on greens.
ETA: I am also not a big salad fan, and I absolutely ADORE this salad and eat it a few times a month. Trader Joes has a similar one in the prepared foods section that I grab if I need lunch on the go.0 -

I am doing a BBQ chicken bowl tonight that is a sheet pan dinner with chicken, sweet potatoes, and broccoli. 407 calories and the recipe is on thecreativebite.com
Otherwise I think what you have listed sounds fine and I would just toss those veggies in with the veggie rice and let the overflow BBQ sauce season it. Other option is just to add a cup of frozen mixed veggies into the rice - nice quick prep that way!0 -
I think I have it figured out. I found a recipe for a charred corn polenta (with cheddar, yum....but I may use pepper jack). That will be my base, then I will top with carmelized red onions, grilled zucchini and cilantro. Then put grilled BBQ chicken on top.
With the nicer weather, I am ready to grill!0 -

I am only using the polenta base and then kind of making it my own from there. I also may use pepper jack cheese in place of the cheddar.0
