As soon as I log other types of exercise, my steps calories seem to adjust and get removed .
Is this normal ?

It is normal if you have an activity tracker synced. When you log exercise separately, MFP should ask for the Start Time, which ensures that the Calories you earned during the exercise activity don't get double counted by the step calories recorded during the same time. When logged correctly, some or all of the step Calories during that time period may be reduced.

I only use my iPhone .

For example say I walk for an hour and I get 70 exercise calories .

Then I do another workout (not using phone to track ) e.g. A keep fit video

When I enter the keep fit calories it will then take away my walking calories from earlier

I don't have or use an iPhone, but from reading the MFP iOS Release threads, it seems that when MFP updated the way they integrate iPhone Steps back in 2016, it seems to behave more like the way an all-day tracker works. I could be wrong, but that is the way it seems to me. Since I don't have an iPhone, I have no way to test that out.

So does that mean if I use run keeper ( whilst having iPhone checked on mfp as step counter) it will automatically deduct those and use run keeper calories

I basically want to count my steps daily & have any calories deduct & do occasional run too as that burns more

Yes -- when I use Runkeeper, unless my phone says that I've exceeded the Runkeeper estimate, I don't get any extra calories, even if I've had them previously. I still see the step count, but no calories for them.

My world doesn't end because I don't get an extra 70 calories, so I don't have an issue with it -- it is an annoyance, though.
