Do baked sweet potatoes keep well?

My bf is about to start a bulk and he wants to have sweet potatoes in his lunch this week. We usually meal prep together on the weekend and I was wondering if baked sweet potatoes will keep well? We won't be freezing them they will just be in the fridge. I usually do fried rice for him; never baked sweet potatoes for meal prep. Tia

    Thanks but these meals will be "out" in the fridge. I'm worried about them getting hard and brown lol ever baked them and left them in the fridge?

    Wrap them up and they should be fine for a few days in the fridge.

    Thanks! I wish he liked them mashed with some cream cheese; I KNOW those keep well :)

    They do, and are so yummy that way.

    I often roast them and store them in zip lock bags or containers to throw through salads, they keep well for about 5 days.

    They keep very well. Drop them in a Ziplock bag or big lidded container. If you find they aren't keeping long enough, you can just nuke fresh ones the night before you need them. Simplest baked veg ever.
