Struggling with weight loss

So I'm having trouble staying motivated on my journey because I'm struggling to lose any weight. My weight fluctuates within the same 5 lbs but hasn't really gone down in months. I'm not losing inches either and it's started to get to me. I'm not sure what I'm doing wrong so I thought I'd see what others tried when going through this.
I'm limited to the amount of exercise I can do at the moment because I have hip bursitis and multidirectional instability in my shoulder with tennis elbow. I'm going to physio twice a week (Wed and Fri) and I really do work hard for an hour or so each time. I do as much as I can but spend a lot of time sitting at the moment
While my diet may not be perfect I'm always under my calories - sometimes by 100 cals and sometime by quite a lot especially on physio days (yesterday I was under by 971!) and tend of eat around 2000 cals per day (I weigh 313.3lbs as of this morning). I weight all my food and use a fitbit to track calorie burn. I've been trying to cut down on my added sugar over the past month. I've cut out chocolate, cakes, fizzy or sugary juice, sweets and have only had the odd biscuit. I drink at least 2 litres of water with diluting juice (low sugar) per day and I've been making an effort to establish a regular sleeping pattern so I'm getting enough sleep.
I've recently been to the doctors due to dizziness and headaches and found that my iron, folate and B12 were low but my iron level has come up in the last couple of weeks (not back to normal yet though) and my B12 has came back to normal. My thyroid levels, etc were all fine.
I know I'm not the healthiest person in the world but I am stumped as to why I'm not having more success with my losing. Over the past month or so I've actually gained about 4 lbs and it's starting to take it's toll. Not seeing any kind of results makes me want to just give up
Any tips on how to overcome my slump is welcome and appreciated!

When your limited in activity, it is vital your eating be on point. You need to eat whole foods, fruits, veggies, lean proteins and whole grains. Follow the calories mfp set for you and be sure to accurately log. Not logging accurately is only fooling yourself.
Also look on YouTube, there are many chair exercise videos you can look at. It will help get you activate without straining your body.

When I wasn't losing weight as projected, I started looking at what I was doing "wrong". I weighed/measured foods I didn't feel I needed to and surprise! I was eating enough to negate my deficit. Yes, it's tedious. Yes, it makes you feel like you have a neurosis and/or eating disorder.1
