Any Soy-Free, Grain-Free Vegetarians?

So I have Graves Disease. Saw the endocrinologist today and my thyroid levels are only slightly above normal without medication, but I feel terrible. The doctor said soy and iodine are no good for my thyroid. He also noticed my stomach being bloated and asked if it had always been a problem (it has. My belly used to stick out when I was a toddler). He wants me to try a soy and grain free diet for a month.
That'd be okay except I don't eat meat. I don't really eat fake meat products, but I eat a lot of pasta, oats, etc. I don't like beans so I don't force myself to eat them. I do have Whey Protein shakes and eggs but they get old quick. I'll add that I'm working out 7 days a week. I traded the flight attendant job to be a residential camp counselor (for now) and Im teaching basketball and football. I lift 3 days a week, cardio all 7 days, and I play at least 45 minutes of basketball daily.
Any suggestions? I think I'll have to add meat back into my diet but I'd like to avoid it.

I'm not 100% gluten free but I don't eat any wheat and hardly ever have any soy. You can look at my diary if you want some vegan food. Feel free to message me for any recipes you want1

Eggs, beans, nuts, dairy. It's hard to truly eat soy-free. It's in natural flavorings and mono and di-glycerides and is prevalent in processed products. I also cook my cruciferous vegetables and don't eat them within 4 hours of taking my thyroid pill.0

Maybe learn to like beans. Plenty of recipe options and you could try blending them into a soup, so you don't notice texture. It's a month test right?0

If you're ovo-lacto, there are plenty of dairy and egg options, I'd think.0

One of my employees had the same problem as you, but she was a vegan.
She got her protien from beans, hemp seeds, and quinoa. She ate the same thing every morning. Hemp seeds, beans and quinoa.
She was a 37 year old blonde bombshell, I think her strict diet helped her with her skin and overall look because I thought she was in her 20s until I had to look at her file for some HR issue. She definitely looked like someone from Hollywood.1 -
It's Passover now. I'm getting my protein from eggs, dairy, quinoa, and nuts.0

Could you maybe try some rice pasta? Or would that be a grain? Sorry I'm a little ignorant to this lol0

I'm vegetarian and tryyyy to be gluten free bcuz wheat does give me problems but I do eat soy. My fav gluten free bread is Kinnikinnik if you are looking for an alternative. I know it is frustrating to try to be gluten free and vegetarian for sure0

Have you tried eating chickpeas? They are god source of protein. I like to get my protein with hummus, nuts and eggs. I am on the road right now so not eating so good...0

I think you will need to learn to make your own sauces and bases.

Low in protein but gluten free, try the lowly buckwheat.0
