Homemade refries (use coconut oil for flavor--don't need much!) on corn torts.
You can add low fat mozzarella for more protein and not a lot more calories. Or slap some deli turkey or other meat on there.
I make my beans and freeze them on a cookie sheet in 1/4 C wads, then pop the frozen wads into a Ziplock bag.
One serving of beans smeared on three torts with a tablespoon mozzarella on each, folded in half for easy handling, is pretty filling and sticks to the ribs. Add finger veg or fruit.0
