Healthy, fast, and full of flavor...sharing my spicy lime thai peanut sweet potato noodle dish
I'm working a late shift at work today, and struggled getting motivated because I was tired and hungry. I wanted to eat acres of noodles, but knew that would be a bad idea. So, I modified a low-fat peanut sauce recipe and mixed it with steamed spiralized sweet potato noodles. Steaming the sweet potatoes meant no oil was used cooking them, and they were ready in about 5 minutes. The peanut sauce used low-fat PB2 to drop the calories and pack a better protein punch. I felt super healthy eating raw garlic and ginger. That also added a ton of flavor to the dish. I did sweat a little eating it. I also added shrimp, because shrimp is another lovely high protein/low fat indulgence. I was so proud of myself I wanted to share it with someone.
