Sick of chicken and broccoli

Interested in seeing some new fun easy meal preps! I'm a mom to a 6 month old and try to get in a workout every day so I'm busy busy! Having said that it's hard to maintain a healthy diet while constantly on the go! I'm sure getting sick of the same old chicken and rice!

    I love my slow cooker. I make a great low cal enchilada soup, pepper steak, taco salad etc using the slow cooker so I can toss in in the morning and it's ready when I'm home (I do the chopping the night before).

    Make some wraps, soups, salads, stuffed peppers, Nasoya pasta, tofu burger, stir fry, etc. Variety is key.

    I eat apples and oranges as snacks, popcorn, use unsweetened almond cashew, and also high fiber cereal (hot or cold). As long as you stay in your calories, and make good fuel choices, you will be fine.

    LOL only half joking. But yeah, chicken and broccoli ends up a really boring staple. "Most" other meats or veggies can be swapped out with similar macros. You could even swap in corn or something if you're okay with the extra starchy carbs.

    You can always try cooking said chicken and veg a different way. Roasting, pan frying, different seasons (mccormick sells complete seasons in the spice section, or you can buy premade marinades).

    Really tastey asian marinade I do is marinading chicken in egg whites and soy sauce. Then cooking it in the pan with a little bit of peanut oil, fresh garlic, and ginger, then throwing in veg and making a stir fry. It's still "chicken and broccoli" but now also completely different.
