So I tried vegan about a month ago and lasted about 3 weeks... I caved and have been freely eating what I want ever since.
But I really miss it. I was having fun cooking and felt so much better and energized, and I want to go back
The problem seriously is that I don't think I can give up Mexican food lol. This is really not a joke. I eat it at least once a week and I cannot imagine myself not being able to eat that chicken and steak burrito smothered In cheese sauce...
It's a real problem. What should I do?

A first step might be to try and replicate those things you love using vegan alternatives. Vegan chick'n strips and vegan cheese sauce as example. There are so many substitutes now a days to experiment with. That will get you back cooking and make you feel like you aren't being "deprived" of something you've enjoyed in the past.
I also agree that you need to decide why you want to be vegan. If it's for health, take the time to plan out your journey and transition. If it's for the animals, take the time to plan out your journey and transition. Drastic changes that aren't thought out don't tend to last, regardless of why you want to make them.1 -
So ditch the label? Eat the vegan foods you want to, and eat the mexican foods you want to. The end.2

I know that (for me personally) that unless I change my habits to allow me to eat what I like to eat, I will not maintain any loss from overly restrictive diets. I am an omnivore for life but I also like vegan cookies and eat the vegetarian options at work lunches frequently (in fact, I have vegetarian days 2-4 days a week, just because I happen to like vegetarian foods a lot too). I even like tofu and eat it when the mood strikes.0

I am not a vegetarian, but still love to eat veggie Subway subs and veggie pizza. It just tastes good. You don't have to have a label to eat what you want.2

Unless you have reasons other than heath (ethical reasons, etc) just try to eat as vegan as much as possible and know that it's okay to occasionally eat Mexican when you want. You don't have to do all or nothing. There's no reason why you can't cook healthy foods that are vegan and non-vegan. Eat what you want.1

Eat what you want. For this to be successful and a long-term process it has to be sustainable. By you giving up the things that you enjoy you're going to be miserable and as you've learned it's doomed to failure. Weight loss and sustainable maintaining doesn't matter of eating less calories than your body Burns and once you reach maintenance it's a matter of it being sustainable.
I've lost 80 pounds over eight months and then maintaining for eight months. If I had to give up Wendy's hamburger pizza and beer on the beach I could have never done this.
Eat vegan if you want to eat vegan but also eat the Mexican.0
