Exercise and Calories

I didn't plan as much as I should have and I burned over 600 in calories (we had a 5K fun run then 30+ min strength training). I made sure to have at least 20 grams of protein after each session of exercise and do my best to eat throughout. However, I came in about 350 calories under. Should I eat that the next day or let it go if it is only occasional. BTW, I usually only burn between 200 - 300 calories daily for exercise.
