Healthy Potato Salad Recipe
My mom is making her famous (at least in our community lol) brisket and I was at a loss for what side I could make without cringing after logging it into this app. I've been craving potato salad and this was beyond satisfying.
4 russet potatoes, boiled and cubed
Half a huge sweet potato, boiled and cubed
An avocado, mashed
3-4 tsp mustard
A handful of chives, chopped
6 pepperoncini, roughly chopped
Half a lemon, juice and zest
Lawry's seasoning salt and black pepper to taste
Half tsp garlic powder
Half tsp onion powder
Half tsp dried parsley
Half tsp paprika (Leave out if you're serving guests and want a more appealing, light green salad. This definitely affects the color)
If you want it to be even creamier, you could add Greek yogurt but I loved it as is. I always use avocado and yogurt in chicken salad. I do wish there was less sodium in this recipe but I'll live
