How do I cook whiting on the stove using less no more than a tsp of oil and avoid having mushy fish?

    Do you have a big saucepan? Could you put a small upturned bowl with a plate on it in the saucepan , put some water in the bottom and steam that way?

    Do you have a cast iron skillet? They are nonstick and you can cook fish with no added oil.

    You should be able to just pan sear it on both sides. No mushiness.

    They need a little oil or they do stick. They aren't as nonstick as actual nonstick.

    Thx, everyone. Last time I cooked the fish on a nonstick, it was mushy. Maybe its something I'm doing wrong.
