Stir frys are my quick meal go to. Start the rice or noodles first. Then cook lean meat in a non-stick pan. Add veggies cook some more. Then add a sauce.........

Invest in a crock-pot if you don't already own on. Throw stuff in it before work....turn it on low.

If you're cooking for one:
I do breakfast for dinner. My go-to lately is eggs cooked over medium on top of an English muffin. I throw in mina harissa/sambal oelek and black pepper to spice it up. So far, I'm digging the sambal oelek best. After cooking the eggs, I throw a slice of ham on the pan to brown it a smidgen. I eat the muffins and egg open-faced style with the ham on the side.
Using Thomas Light Multi Grain English muffins, two eggs, Pam to coat the pan, and Cumberland Gap premium sliced ham, the entire meal is 370 calories. 32 g protein, 8 g fiber, 28 g carbs. A little high in sodium, though; I think around 600 g. I'm working on figuring out how to lower that for myself, but I'm most focused on protein and fiber at the moment. Takes ten minutes or less to cook. And the appeal of runny yolks (which helps me say no to adding cheese) usually helps motivate me to put forth the effort to make it.2
