Fresh Zucchini, Tomato, Onion & Bell Peppers

My Mom has always made this, and it's absolutely delish!

The measurements are (and don't have to be) exact, but it's what I come up with when I do it @ home. - I usually get about 6 servings out of it when I make it.

2 fresh mid size zucchini, peeled & slice into medalions. (roughly 4 cups)
2 fresh mid size tomatoes, sliced or quartered. (roughly 2 cups)
2 fresh white onions sliced (roughly 2 cups)
2 fresh green bell peppers (roughly 2 cups)
1 tblspn of minced garlic (jarred or it can be fresh)
1/2 tsp black pepper flakes
2 tblspn EVOO or whatever oil you like (when I built my recipe in MFP, I was out of EVOO so I used Canola on the recipe).

Put all in a large sauce pan, add about 1 cup of water, cover with lid & let simmer for around 30 minutes until veggies are tender.

I LOVE this recipe. It's so easy, and a serving of it is only around 111 calories
