I got a bag of frozen brocolli and peppers. When i got home I decided to look at the ingredients and they were brocolli peppers and xanthan gum. What is xanthan gum and why would it be in frozen veggies.

Xanthan gum, as mentioned before, is a thickener. It is popular among celiacs because there is no gluten like flour and some other starches have. A very small amount is needed0

I believe it's used in frozen foods to keep ice crystals from forming in the food. It's a very common ingredient. You've probably eaten it before if you eat any pre-packaged foods. It shouldn't have any taste.3

It doesn't have a taste. As pp mentioned, it is popular with celiacs as a binder in gf breads. Many of us, however, who are truly gluten intolerant, or gluten sensitive, find even small amounts can trigger gut reactions--usually a case of the squats. More recipes are using psyllium husks instead.
