My job has me driving hours a day and not getting a real lunch break or even time for one. I find myself eating a great breakfast but skipping lunch. Need ideas for meals and snacks I can take on the road with me and eat in the car.

Can you bring a cooler with you? Also having a small clean up kit will give you more options, pack of wet wipes squirt bottle of water and small towel means you don't have to worry about keeping all drips off your hands. Cut up apples, carrots, celery in Ziploc bags, trail mix, crustless quiches could all work as road food.

For me I have found that foods high in sugar and saturated fat should be avoided for road trips. They make me feel tired and lethargic which isn't helpful for driving. A home made trail mix with nuts, seeds, dried fruit, dark chocolate and cereals like cheerios work well to snack on. Plenty of fresh fruit and veges cut up ready to eat are great. Add some wraps or cracker biscuits with chicken, turkey or beef (if you can keep it cold) or tins of tuna and some cheese for lunch. Drink plenty of water to keep you hydrated and alert, even if it means more loo stops.

I prep as much as I can the night before so I am ready to go in the morning and don't have to spend much time preparing lunch on the spot.

I spend all day in a semi. I just pack my lunch in a small cooler everyday and it is typically whatever is leftover from dinner. It doesn't take long at all to actually eat and at some point, you are stopping at your destination or for fuel or something. You could also simply just pull over for 5 minutes.
