Is it true that if you are in calorie deficit but eat sugary / processed foods the fat will stay on? Lots of people have told me this but I rather trust you lot who actually do this

That is incorrect. Google the Twinkie diet.
A calorie deficit is what results in weight loss .
Good nutrition (macro and micro nutrients) results in positive contributions to overall health.
Incorporating foods that you enjoy, even if they are sugary processed foods, in moderation, often help with ensuring that the process of losing weight is not so miserable as to be unsustainable.1
