My 'big event' motivation is a big extended family camping trip my SIL does every August. It isn't a super long drive but she generally stays a week. I'd rather camp in a rural area and see the stars but that will have to be a separate trip.

Anyway, I'm not sure we'll have any refrigerator space of our own. They do bring a mini and some coolers. What do you eat when you're down to a cooler and a grill? How do you track calories when sharing food and cooking with a larger group? I'm essentially at maintenance right now.

    I like the chili mac.

    These are very light weight so when you hike in to camp under the stars, these will be a good choice for that, too.

    By the way, you said your plans are to camp in August. For what it's worth, the Perseid meteor shower will reach its peak in early to mid August. Every year I go somewhere dark and remote to watch.
