Let me know if you want the recipe. I used whole eggs, low fat cottage cheese, ajeeka (red pepper garlic condiment that could easily be omitted) and a sliced zucchini. Yum!

    Sounds good, though I've never been a fan of cottage cheese. Would it be good prepped and reheated (or cold)?
