I work out 3 to 5 days a week and I almost
always notice weight loss during the the 2 to 4 days that I am not working out? Is there a scientific reasoning behind this?

Possibly water retention?2

It's water retention. I've weighed myself before and after workouts and found I can lose a couple of pounds of sweat, then bounce back later in the day and overshoot the starting weight by a couple of pounds. Things stabilize on a rest day as you settle at equilibrium.1

Weight loss patterns do not match workout or calendar schedules. No more complicated than that.2

Water.
I haven't trained much due to an injury and have lost 2lbs even though I am eating at maintenance.1
