Does anyone know how long water weight from excess sodium reflects on the scale?

There is no set time. It's going to depend on your water consumption, your activity level, the other foods you're eating, your individual body's response . . .

Drink water. Eat foods high in potassium and magnesium. All of that will help balance electrolytes. But in the end, why does it matter? Your body has natural fluctuations anyways, so worrying about what is causing it is going to be a losing battle.
