Favorite healthy slow cooker / crockpot recipes?
I'm working on my meal prep skills and just bought a slow cooker to do bulk cooking. My first meal was a lot less healthy than I meant it to be (baked ziti aka carbs and cheese). Fail.
I tried searching for healthy recipes online but a lot are meat-based and I'm trying to be as pescatarian as I can for health reasons. I'm hoping to discover slow cooker recipes with lots of veggies. Have any favorites to share?

Look for beans/legumes slow cooker recipes. Fish, on the other hand, wouldn't be good in a slow cooker. Fish is too delicate for cooking for long periods of time.0

Try Youtube, they have a lot of crockpot/slow cooker recipes0

Throw in beans and veggies for chili. I do that all the time. Dee-lish!1

Ribs are amazing in slow cooker, and then sauced and brouled just long enough for crispy outside ☺ Also pork sirloin, chicken or carne asada with taco seasoning and you can make awesome tacos.1
