Easy General Tso Baked Chicken

1 lb boneless, skinless chicken breasts
1 cup chicken broth (or microwave a bouillon cube for 2 minutes in a cup of water.)
1 1.25oz packet of General Tso Seasoning (I use the Sun Bird brand)

*I don't own a skillet that is oven-proof, hence the extra step.*

1) Preheat oven to 375. Set casserole dish in oven to warm up a few minutes before searing the chicken.
2) Sear the chick breasts for 2 minutes on each side.
3) Transfer to casserole dish and pour the chicken broth over chicken.
4) Sprinkle entire seasoning packet over chicken and broth, dredging the chicken back and forth a little to get an even coating.
5) Bake chicken for 25-30 minutes, turning chicken over once halfway through.

The leftover liquid makes a nice sauce.

    Thank you. My husband usually hates baked chicken, but loved this experiment. Also, if you own an oven-proof skillet, just dump the broth & seasoning over it and pop it into the oven.

    Yep, I thought so. I can control the sodium in the broth because I use Imagine or Kitchen Basics that are very low in sodium. I may not be that lucky with the seasoning, if I can find it. Thanks!

    It really could work with any seasoning packet. I'm going to try taco seasoning this week.

    The sodium of these seasoning packets IS pretty high, so just keep that in mind as you plan the rest of your food for the day. :)

    I've always found them in K-Mart (as well as other grocery stores) about $1.20 a packet (many different chinese varieties)

    If you want a cheap oven proof skillet, check "thrift" store and garage sales until you find a cast iron skillet.
