One of my go-to recipes is making turkey meatballs in homemade tomato sauce. But I cook the meatballs in the oven separately, and a lot of grease comes out of them. How do I account for that in the recipe calculations. I thought about putting cooked ground turkey instead of raw in the ingredients, but I'm pretty sure I lose moisture/volume from the vegetables, not to mention the fat that leeches from the sausage. Is there any way to account for the fact that a cooked meatball has fewer calories and fat than the raw ingredients would indicate?

According to the two entries in the USDA database, there is very little difference in Calories, protein, and fat content lost in the cooking process. It appears most of the loss is water weight.
Comparing a similar amount of protein in 100g raw ground turkey corresponds to about 70g of cooked ground turkey. On average, raw ground turkey loses about 30% of weight when cooked, the majority being water weight.
100g Ground turkey, raw (148 Cals / 19.66g Protein / 7.66g fat / 72.36g water)
70g Ground turkey, cooked (142 Cals / 19.16g Protein / 7.28g fat / 43.45g water)
I would just use the raw ground turkey entry in MFP and use that in building the recipe; then weigh the final batch and use that to determine Calories per serving. The final Calories per serving will not be far off.
