Does anyone have experience with the strength training apps Sworkit, Fitstar or TouchFit: GSP? Which would you recommend? I would love feedback on their ease of use, the variety of workouts available, the quality of the graphics and/or videos, and how "smart" they are in adapting to the user's current fitness level.

I personally loved Sworkit. I used it for quite a while. A few things to keep in mind...it's only body weight so no dumbbells or resistance bands and what not. Also, you can get personalized workouts but that costs. (Like 7.99 a month? Not too bad) Their basic stuff it still good though. You get 30 sec a move and they are adding new stuff all the time. It's very easy to use and it has moving graphics that show you how to do each move. I liked it and still do it occasionally but I really like weight lifting better. Full disclosure: I haven't tried the other apps you listed.

I have Sworkit, Daily Fitness Apps and Nike+ Training Club. I like all three of these, though I tend to use Sworkit more often.

Daily Fitness Apps has a great free version and a pro version that includes kettlebell, medicine ball and pilates exercises. I am not ready to buy that but it tempts. I think the reason I don't is because it doesn't automatically send calorie info to MFP. Sworkit and Nike do send that information. Between Sworkit and Daily Workout Apps, DWA is the more economical choice, a one-time upgrade fee instead of an ongoing subscription.

Nike's app is good, there are a variety of workouts, some with equipment and some without. You can filter for that when selecting workouts. Some workouts are from famous athletes, some are designed for famous athletes.

All three of these apps have good video instructions and voice cues. And you can cast them to your tv using Chromecast if you have Android or some casting app.
