Apple watch amd MFP

So i switched back from my fit bit charge to my apple watch and immediately remembered why I stopped using it. With fit bit, i enabled negative adjustments, set it to minus one pound a week and chose sedentary as my activity level. If i more or less stayed within my net calories, I lost weight. The apple watch is a little different though. I did all of the above, however yesterday for example, i walked over 16000 steps and was only given 150 extra calories on top if my sedentary goal of 1500, however when i went in the activity app it said I burned around 2600 calories that day. So shouldn't my net goal have been closer to 2100? I have days where I walk 7000 steps and days when I walk 40,000 steps and sometimes i honestly dont know the difference ( i know how weird that sounds but im always busy and sometimes I dont differentiate being physically busy with just running around all day) so knowing a ballpark of what I can eat that day is helpful. Will the apple watch not work like this?
