Potato/Cheese/Sausage Mini Frittata Loafs (Vegetarian Version)
8 Mini Loaf Frittatas - 128 Calories Each
Ingredients:
2 russet potatoes - peeled and chopped
1/3-1/2 yellow onion - chopped
1 Tb extra virgin olive oil
1tspn salt
Pepper to taste
1 tspn dried thyme
1/2-1 tspn dried dill
1 cup morning star griller crumbles
1 jar chopped pimentos
1/4 cup shredded Parmesan cheese
4 eggs
1/2 cup 2% milk
Spray oil
Assembly:
Using spray oil, quickly spray a non stick mini loaf (muffin type) pan (see picture)
In a frying pan sauté the potatoes and onion in the olive oil till potatoes are crispy golden brown. Onions will be tender by then. (You might need to add a little water and cover with lid during cooking process to add in getting the potatoes cooked thru.). Add spices, salt and pepper, griller crumbles and pimentos. Sauté a few more minutes to cook the griller crumbles.
Remove from heat. Spoon even amounts in the segments of the mini loaf pan.
In a medium size bowl whisk together the eggs and milk. Add a touch more salt and pepper. (Remember Parmesan Cheese is salty). Whisk in the Parmesan Cheese. Pour even amounts of the milk/egg/cheese mixture over each potato section. Use a spoon to gently arrange the egg and potatoes to be level in each loaf section.
Bake at 350 degrees till golden brown on top.
