Back at MFP, getting in shape after baby - advice/experiences?

Hi all,
So a couple years ago I used this site pretty intensely, lost a lot of weight (overshot my goal even, so gained some back) and managed to maintain at a comfortable level for a couple years. Got pregnant, had baby 9,5 months ago, lost most of the baby weight without going into deliberate calorie counting or training a lot and only have 2-3 kilos (4-6 pounds) to go to get back to my "before" weight. After I stopped breastfeeding I promptly gained some weight back. wheeee! And now I'm stuck for the past month or two.
Now, I'm in no particular rush and having done this before, I know the key is consistency and discipline. However, I'm running into two roadblocks that - duh - I knew they'd be there but somehow I thought I'd manage to overcome. Which is proving much more difficult than I thought.
1) eating right and paying attention to macros + calories etc. Due to house remodeling, we don't currently have a proper kitchen. Now, don't get me wrong, we manage fine with the temporary solution we have, but weighing out ingredients for my meals is just not going to happen when the priority is that the baby gets his nutritious and tasty food. I can generally stay around the calorie count I want *IF* I don't snack. But man, sometimes it's necessary, it really is.
2) finding the time to exercise. There's none. The kiddo goes to daycare, I go to work, the hubs goes to work, and due to his line of work we don't have a lot of overlap at home in the summer months. My parents live 2,5 hours by plane away and his parents are deceased. Frankly, we don't have the resources to find an extra babysitter for a few evenings a week, even if I had the energy to go the gym. I got a gym membership several months ago but I haven't gone once. Not once I do some bodyweight excercises on my own, but getting the motivation up outside of the gym is pretty hard for me. In the summer I bike to work, 11 k (+/- 40 min) one way, 11 k back. It's been great for my stamina but it's not really enough for where I want to get with my condition.
So, anyone out there with any practical tips or comparisons to your own journey?
