Does anyone have any tasty and creative granola recipes? I bought a Nature Valley pack of Granola bits and I wanted to try something with it rather than nibble on it as a snack. Thanks everyone! :)

I roasted various seeds and chopped almonds with some shaved raw coconut on top in the oven, then I sprinkled cinnamon on top for some added flavor. It's not very sweet, which is why I like it because if I have actual granola in the house I'll eat it all like candy. In the morning I'd serve it with almond milk and fruit, almost like a granola or cereal. You could dress it up any way like adding dried cranberries or something, or maybe drizzle some honey on it. Oh, that would be delicious.

    Granola:
1 cup rolled oats (or buckwheat groats)
    1/2 cup brazil nuts
    1/2 cup walnuts
    1/4 cup hemp seeds
    1/4 cup pumpkin seeds
    3/4 cup shredded coconut
    1 1/2 cups dates
    1 cup water
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1 teaspoon ginger root

Soak the nuts (and buckwheat groats, if using) in water for 8 hours, then drain and rinse. Throw the nuts, seeds, coconut and oats into a large bowl and set aside. Blend together the dates, water and spices. If it's still too thick, add more water. (The consistency is like thin yogurt.) Pour this into the large bowl and evenly coat all the dry ingredients in it.
Spread out on dehydrator trays and dehydrate for 2-3 hours at 115 degrees, until it's crunchy. Or bake at 250 degrees in your oven for 2 hours.
