1) Stirfries and curries are versatile. You can use most lean protein and vegetables. You mention healthy without mentioning if you're looking for low-calorie. If you are watching calories, too, the things to watch out for are oil (naturally!) and prepared sauces and pastes. A stir-fry made in a non-stick skillet with a teaspoon of oil plus broth or water added when the pan seems dry is going to be lower-calorie than one made with a table-spoon of oil, plus sweet-and-sour sauce. A lot of Thai curries call for red/green/yellow curry pastes or sauces which can load on the calories, as well as coconut milk (I use the light version myself).
2) Chilis
I'm vegetarian and do a fair amount of cooking. If you'd like to check my diary, I can share recipes. I have it set to public, but some people have told me that they can't get in (I think it has to do with using the phone app instead of the website). If so, send me a friend request.1 -

Each child gets a menu night. My girlfriend does this with her children and they each have a favourite. The top pick is "Yellow Meal" where all foods are yellow from the corn, chicken strips and home fries.

Frittatas are a quick and easy meal. Adding leftover veggies make it economical, as well.0
