Egg muffin ideas

I'm finally trying out egg muffins for breakfast. Most of the recipes on the internet are high fat - ingredients include bacon, sausage, ham, etc. I'm trying to keep it low fat (I get healthy fats elsewhere) and low-ish cal, hopefully ending up somewhere from 50 to 130 calories per muffin. To clarify, I'm talking about the recipes I see for basically just eggs with veggies/cheese etc added - not flour-based muffins.

So, I got a large carton of egg beaters, and am starting off with a few different ingredients, and will be trying different combos.

So far, my ideas for additions to the egg-beater based muffins are:

- Greek! tomatoes, chopped spinach, and maybe some feta if I want to splurge
- Pizza muffins! Got this idea off the internet. Turkey pepperoni, low fat mozzarella chunks, and tomato paste with a little italian seasoning.
- Fresh dill and green onions
- A chopped chicken sausage link, with chopped spinach and onions.
- *maybe* - I thought of this while shopping - pre-cooked breakfast potatoes. If I can find some that aren't overly greasy.

Looking for more ideas. I don't care for bell peppers, and I want to be careful with high fat cheese. The idea for these is lean and healthy! Thoughts?
