What do you track?

I track daily calories, carbs, fat, protein, sodium, and sugar. I'm trying to keep at 1200 per day and less than 30 carbs. I had some days where I went over the carbs last week, still in the 30s...but now I'm stalled. Anyone else tweaking their numbers to get off of a plateau?
