Spring/Summer/Salad Rolls

What are your favorite recipes or fillings? These are my new summer obsession. I would love to know how you make them.

Today I just made something up. More like a salad in a rice wrapper. I did one with sliced strawberry, chicken, cucumber, basil and red leaf lettuce. The other I did sliced apple, chicken, blue cheese crumbles and red leaf lettuce. I dipped them in a little balsamic dressing. So fresh and very delicious.

    Good idea. I usually do Chinese sausage, thai basil, rice noodles, cucumbers, pickled Asian veggies and sometimes avocado. Then dip in peanut sauce.

    I have a fresh pack of rice paper at home. Now I'm going to experiment -- I've never done anything but try to replicate the Asian restaurants. Thanks for the idea!

    Made another Salad Roll for lunch today. Inspired by a salad from my favorite Mexican restaurant. Tomato slices, avocado slices, bell pepper strips, cucumber sticks, pickled cactus strips and red leaf lettuce all wrapped in rice paper wrap. Again served with balsamic dressing for a dip. Very good! Light and refreshing.

    How long do they keep in the fridge after you make them?

    I usually make and eat. I have seen one video where they say you can store in the refrigerator in an airtight container with a damp towel for 3-4 days. But I haven't tried that yet.
