I'm struggling with knowing my activity level for the summer and have been playing around with the settings. I'm a teacher that nannys in the summer and I don't move around as much so I don't take as many steps, but I seem to be right on the edge between active and somewhat active. I've only been losing about half a pound per week since May. I just don't want to be eating 300 extra calories each day

It depends on the activity level you set and on your device. I have myself set as lightly active and it tends to be around 5000 steps when my calories start going into the positive.
However, it won't make much difference to the calorie allowance as a whole, increasing your activity level gives you more calories in your main allowance. Dropping it would just mean you have a lower base level calorie allowance but will add on more calories to your adjustment. So you're still going to end up with approximately the same calorie allowance by the time you've synced your device.
If you're not losing as much as intended, check your food logging accuracy.

I am set to sedentary and I usually see my adjustments kick in around 6-6:30 AM (because I exercise in the morning).0
