Anyone using an instant pot or similar pressure cooker regularly as part of their healthy meal prep? Comments or fave recipes? Thinking of getting one.

    I love my Instant Pot. It's amazing for beans, soups, and rice. It's been especially great now that it's hot and humid here because it doesn't heat up my kitchen at all.

    Oh yeah!
    Use it for stews, soups, beans, roasts, pork chops, etc. As said above it's great as it doesn't heat up the kitchen if I don't feel like grilling outside.

    I love prepping chicken in it. I can throw a package of chicken breast in, cook with the poultry setting, NPR, and then shred the chicken right in the pot, incorporating any lost moisture back into the chicken. Makes a great add in to rice bowls and salads throughout the week.
    It also makes prepping HB eggs an absolute cinch!! I use 5 min HP, 5 min NPR, and they come out perfect and easy to peel every time. I've cooked up to a dozen at once.

    Using it right now! Love love love it. Michelle Tan from Nom Nom Paleo has some wonderful recipes for it. Her Instant Pot carnitas recipe is insanely good.

    Just bought one this week. Have not used it yet, but I am searching recipes. There is an Instant Pot Community on Facebook with links to lots of ideas. I look forward to it.

    This is my favorite and 98% of my lunches:

    Mexican Crockpot Soup
    Ingredients:
    1 Tbsp olive oil
    2 lbs boneless chicken breasts (I used three)
    1 ½ cups chopped red onion
    1 ¼ cups chopped red bell pepper
    ¾ cup chicken stock
    ¼ cup chopped cilantro
    1 Tbsp Cumin
    2 Tbsp chopped chipotle chile in adobo (I add more)
    6 cloves of garlic, roughly chopped
    2 (28oz) fire roasted tomatoes
    1 (4 oz) chopped green chiles, undrained
    Salt and pepper

    Optional:
    Zucchini, green beans, spinach, cauliflower…or any other vegetable you like.

    Instructions
    Add everything except the cilantro in the Instant Pot and stir it up
    Cook on manual for 22 minutes
    Shred chicken
    After I shredded the chicken I added more stock. I also add a bunch of zucchini, green beans, spinach and cauliflower and put in on sauté for a few minutes.

    I use it a ton but not for "meal prep" just regular cooking. My favourite things to make are bolognese sauce, beef stew, lentil soup and taco chicken. I also like it to steam fish from frozen.

    Wow, you guys are inspiring!

    My brother gave me one for Christmas, and I'm still learning. It took a while for me to adapt my slow cooker pulled pork to high pressure cooking, but once I figured it out, it's great. As you would expect, much faster (slightly more prep). I use it every week for making chicken stock from a whole chicken carcass. I let it go 20-24 hours (vs. 6hr on my cooktop feeling under house arrest) and that's been an improvement. Nothing beats it for serving hot tamales to a crowd... steams them and keeps them hot. Still working on adapting my cooktop beans to the instapot... they end up more liquidy than I like so that's a work in process.
