Strawberry Banana Muffins (Paleo!)
This recipe is adapted from this one here: http://paleomg.com/strawberry-banana-chocolate-chip-muffins/
SO,
Ingredients:
2 medium sized bananas
2 eggs
3 dried pitted dates (I would omit these next time as they are WAY TOO sweet!)
2T sunflower seed butter (I used homemade and you can use any nut/seed butter you want)
1t vanilla extract
4T coconut flour
2T flaxseed meal
1/4t baking soda
1/4t baking powder
1/2C diced strawberries
pinch of sea salt
Instructions:
Preheat oven to 350
Puree bananas, eggs, dates, sunflower seed butter, and vanilla extract in food processor until smooth.
Then add flaxseed meal, coconut flour, baking soda and baking powder and salt and puree once more.
Pour the mixture into a bowl and fold in the strawberries.
Split your batter into a lined muffin tin (makes 9) and bake for 25-30 minutes until a toothpick in the center comes out clean.
Now . . . enjoy your delicious muffins!!!!

Yum! I wonder if I could substitute flax for chia seeds? I cannot wait to try this recipe out.0
