I'm going to guess you're low on vitamin A, but over on fat, cholesterol and sodium. In that case:

A multivitamin will take care of your vitamin A problem.

There's no problem going over your fat goal as long as you are getting enough protein and you don't go over your total calories.

Don't worry about getting too much dietary cholesterol, dietary cholesterol only attributes to 15% of your blood cholesterol level. Most dietary cholesterol just gets excreted by your body, as long as you're eating enough fiber.

Too much sodium comes back to your potassium problem. Don't be too concerned about your sodium level, just try to shoot for 1:1 ratio for sodium to potassium.

V8 vegetable juice has a ton of potassium in it, so that is a good option for potassium. Also, potatoes, bananas, etc.

Morton's makes a light salt that is half sodium, half potassium. Also, everything AJ_G said.

also, lots of foods have potassium but not all are labeled as such, and not all the database entries include it.
it takes some searching, but you can find the proper entries that include it. i thought i needed more potassium until i started really searching the database and found that most days, i get plenty.
