Anyone have a low cal, but delicious, recipe for broccoli salad?

    Broccoli Salad
    Source: WW 365-Day Menu Cookbook
    Makes 4 servings
    4 cups blanched broccoli florets
    1 cup cherry tomatoes, cut into halves
    4 black olives, pitted and sliced
    3 Tablespoons sliced scallion
    2 Tablespoons plus 2 teaspoons olive oil
    2 Tablespoons plus 2 teaspoons red wine vinegar
    1 Tablespoon water
    1 teaspoon Dijon-style mustard
    1 garlic clove, minced
    Dash each salt and freshly ground pepper
    In bowl combine broccoli, cherry tomatoes, olives, and scallion. Combine remaining ingredients in blender container; process for 30 seconds. Add to broccoli salad and toss to combine.
    NI per serving: 158 calories, 7 g protein, 12 g fat, 11 g carbohydrate, 136 mg sodium.
    Per Serving: 2-1/4 teaspoon limited vegetables, 2-1/2 servings Vegetables, 2 servings Fat, 1/2 serving extras.

    Addictive Broccoli Salad
    8 servings
    2 bunches broccoli; cut flowerettes into bite-sized pieces; discard stems
    1 head cauliflower, flowerettes prepared as broccoli (I use more broccoli)
    1/2 med red onion, finely chopped
    1/2 cup golden raisins
    1/2 cup pine nuts OR sunflower seeds
    1.5 oz Hormel bacon bits
    1 cup fat free mayonnaise
    2 T. vinegar
    1/4 c. Splenda
    Instructions
    Mix vegetables, raisins, nuts/seeds and bacon bits. Mix mayonnaise, vinegar and Splenda in seperate bowl; toss to coat. 184 cal/5.5 fat/8 fiber

    Thanks so much for the recipes! I have everything I need for the top one but it's the bottom one I want to make. It sounds absolutely addictive! Lol! :)

    So glad to help. Use granulated splenda in the bottom one not the packets. They are both very good. I hope you enjoy them.

    I make a very low calorie broccoli salad with the following:

    Broccoli florets, cut into small pieces
    Grated carrots
    Craisins (or raisins)
    Chopped celery
    Chopped red onion (optional)
    Chopped bacon (the real stuff, not bacon bits)
    Plain non-fat greek yogurt
    1-2 Tbsp honey
    1-2 Tbsp apple cider vinegar

    This is a lot like the broccoli salad you get at the deli, but without the mayo so the calories are much lower.

    Sometimes I add sunflower seeds, pepitas, or chopped nuts. Pecans are also good. If I don't have honey I just toss in a few tsps of sugar. Because everything else is so low-cal, the sugar doesn't really add that many calories. I don't usually measure anything, just throw it all together and adjust the dressing to taste.

    Also, when chopping the broccoli, I never throw out the stems! Horrors!! :o Just peel them with a veggie peeler and cut into sticks like celery. They are delicious!
