So I've been eyeing split peas for their very nice nutritional stats (protein, fiber, and vitamins), but I'm not entirely sure what to do with them. Of course there's split pea soup, although I'm not a huge fan of soups in general (I eat them, but I would much rather make a hearty stew). I'm also not a huge fan of veggies all by themselves, but I love vegetables as part of a bigger dish.
Mostly with regular green peas, I put them in stews, curries, stir fry, etc. I'm pretty sure I can't just straight substitute split peas in any dish, just due to the dried nature giving it a longer cooking time, although I think it might work well with a slow-cooker stew or curry that's going to cook for many hours anyway.
