I used garlic and onion powder instead of the seasoning called for. I also processed the oatmeal a little bit too.

If you don't want them breaded, cook them at 425 for 8-10 minutes per side!

    Baked Chicken Nuggets
    Calories: 164.9 Fat: 4.6 g Protein: 22.1 g Carb: 7.7 g Fiber: 0.9 g Sugar: 0.1 g

    Ingredients:
    16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces (about 1")
    salt and pepper to taste
    2 tsp olive oil
    I can't believe it's not butter
    1/4C whole wheat Italian seasoned breadcrumbs, or use your own
    1/8C panko
    1/4C grated parmesan cheese
    olive oil spray (I used my Misto)

    Directions:
    Preheat oven to 425°. Use rack on baking sheet. For best results, preheat pan/rack.
    Put the chicken one bowl and the breadcrumbs, panko and parmesan cheese in another.
    Season chicken with salt and pepper, then put in a bowl and spray liberally w/ICBINB
    Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking rack. (I just throw everything into a gallon ziplock bag and shake).
    Lightly spray the top with olive oil spray then bake 15-18 minutes.
