Core Food Inspiration

As I near the end of my 60lb weight loss journey I have begun to reminisce about key events that have helped me along the way.

High on the list is my own willpower coupled with the amazing support of friends and family and some wonderful buddies on myfitnesspal but I also realise that it was the discovery of certain key foods which I had never tried before that enabled me to restructure my eating habits in a healthier way.

My saviour and my core food inspiration was the Princes Mexican Tuna Salad. I've had it almost every working day since I discovered it. Purists will complain that it's processed food - that's true but it is nevertheless very healthy, low in calories and extremely tasty. Looking back, I now realise that it has formed the backbone of my diet success, it has been my saviour and my core food inspiration................ what is yours ? :smile:

    Congratulations? Sounds interesting that Mexican tuna salad. Do you have the recipe for me?

    I don't think I really got one key food, tho eggs and bacon are eaten frequently :smile:

    That tuna salad looks really good! Is it saucy?

    My core food is non-fat, non-sweetened, vanilla greek yogurt. Also, seaweed salad is one of my faves. It's healthy, quick as I buy it premade from Costco, and pretty low calorie.

    And, this isn't really a core food, more a method, but I love cooking chunks of meat (chicken, sausage, beef, pork, whatever) with mushrooms and onions, then adding a TB of wine or sherry to deglaze the pan and throwing a green (spinach, kale, arugula, again, whatever I have) in and putting the lid on so it wilts. Sometimes I throw in pasta or quinoa, but only if I've got leftovers I need to use up. It's quick, usually about 10 or 15 minutes, and sooo satisfying for the calorie count.

    There is a sauce but not overwhelming. :smile:

    I love the idea of seaweed salad ! I've had seaweed in Chinese restaurants a few times, I really like it.

    Greek yogurt for me! I never ate it before I started losing weight. Now I use it in recipes that call for oil or mayo or cream. Greek yogurt is the bomb.
