What constitutes as a binge episode?

Is it just eating over your goal by 100 or more or is it eating way pass your goal...like 1000 or more cals over?
I ask this because I used to have major binges (like oreos, 1 or 2 slices of cake, candy bars, fries, chicken, pizza all in one day) but now every week or so I will have two or three days of overeating (not neccessarily junk food but it could be on what I cooked for the day like 4 scrambled eggs instead of 2) and then make it up by exercising so I am still in a deficit. So is that considered binges or just overeating?

I wouldn't consider overeating a binge. To me, a binge is eating an unusually large amount of food combined with feeling like one can't stop or control the behavior.
Virtually everyone overeats at some point.
If you are eating within your calorie goal, I wouldn't even consider it overeating. The only thing to consider is whether or not you feel in control of the decision to eat and the decision to exercise afterwards. "Purging" through exercise is a real thing and it can result in harm (not saying this is what you're doing necessarily).2 -

Pretty much this...binging is a disorder...overeating now and then is pretty common...holidays, pool parties and BBQs, etc...those aren't disorders, those are just occasions and events.
Your calorie target is a pretty substantial deficit from maintenance...100 calories over your target would still have you in a substantial deficit...1000 calories over would probably have you at or close to maintenance.

Well sometimes I eat even though my stomach says stop but my habit of overeating won't let me. Its like I am on autopilot so I thought that that might be more of a binge episode.
When I go over my cal goal that's usually because I have done mindless eating and to combat it I will go workout for about an hr or 2.0 -

Yeah, if you don't feel as if you can decide to stop eating or if it is causing your stomach to hurt, it might be worth talking to a professional about it. It can be really helpful for stuff like that.
If it's just like "mindless eating" where you're eating while reading or watching TV, that's not necessarily a problem (although it can make it hard to control your weight), but if "autopilot" means you don't feel like you are in control of yourself, that could potentially be binge eating.2 -

2 years ago it was much much worse where I wasn't in control at all but since I have been writing down everything, I thought I had it under control now.
Maybe I do need to see someone about it because I just don't want to get back to where I was.1 -
