traveling 9 hours by car

We are traveling by car 9 hours to our vacation site this year. I'm trying to figure out how to not fall in to the fast food rut when we go. We have 3 kids that will eat food from anywhere so I know what kind of snacks to pack for them and when I get to where I'm going I plan to get veggies and fruits for the week we are there. What is a good way to take veggies/fruits on a long car trip? No sandwiches. There will be limited storage space with two adults and three children.

They'll be fine for nine hours in any raw form. Or you could take a cooler.
I say take food that is easy like PB sandwiches and apples.1 -
I like little clip-top food boxes, which I fill up with crackers, grapes, sliced cucumber, cubed cheese, nuts, raisins, whatever you like. I started this when mini-me was a toddler, but I kept the habit. They're just as good for nibbly adults as for kids and you can just make up a whole lot of little boxes and throw them in a bag. Saves money, too.
ETA you can take any kind of fruit and veg this way. I like to pre-cut it as it makes it easier to eat and more attractive (put lemon juice on pre-cut apples to stop them going brown). If you want to keep it cool, put a few frozen juice cartons in the bag with them.1 -
The suggestions above are great. Many families of 5 are able to find room for a cooler and sandwiches. Consider a couple of small coolers if you feel that would work better with space. Get each person one of those lunch bags you can freeze and psvh separate snacks. You can always find room for a lunch bag under your feet.Have fun!1

If you have not cut up or peeled the fruits or vegetables you wouldn't necessarily need to put them in a cooler. But that may be less convenient to eat in the car.
The soft sided insulated bags with a cold pack or frozen water bottle might be good if you need to put the snacks at your feet or tucked in a smaller space.1
