I'm 4 foot 11 and 119 pounds and want to lose a stone and I've always thought that the less calories you eat the more weight you lose, but after seeing posts on Instagram people are eating 1600 plus.. I've done my tdee with a calculator online and it's saying 2500, I do 2 hours of cardio a day and lift weights for 30 minutes around 6 days a week.

If I diet 4 days a week eating 750 calories and eat more other days around 2000 or eat around 1600 calories a day, will they both make me lose around 2 pounds a week? What do you think?

You are in a normal weight range for your height, so you do not need to be losing 2lb per week, that rate is aimed at someone who is obese. 2500 also seems very high for the level of activity you're suggesting, the TDEE calculator I use puts you around 2010 calories per day with a heavy exercise routine.

You should be aiming for 0.5-1lb per week max really (1510-1760).

Calorie intake averaged over the week will be the same as if you ate the same every day but in my opinion I would think eating only 750 calories on the days when you're trying to do intense cardio and strength training will make your performance suffer.

you're going to do 2 hours of cardio on 750 cals? does that really seem sustainable to you?

you don't have enough to lose to be aiming for 2lb per week. if your TDEE is correct you should lose 1lb per week on 2000 cals. why starve yourself unnecessarily?
