Hey all - what are you having for dinner?!?!

We have been really busy these last two weeks and am having a hard time coming up with quick and easy meals to eat at home while rushing around for everything!!! It would sometimes be so much easier to just run through drive-thru, but I've come so far I don't want to give in to that temptation!!!!!

    i'm either making stuffed peppers from the biggest loser cookbook or im making whole wheat pasta with ground turkey mixed into the sauce with some salad either way.

    We had prawn caesar salad with garlic ciabatta... a bit of a treat meal for us but still under 500cals! :happy:

    Pork loin in the crock pot basically making pulled pork when I get home :)
  • I'm thinkin about making some chicken nachos...basically shredded chicken with taco seasoning, some salad on top, black olives, cheese and salsa, black beans...the kids love it...I think the cheese is the worst part of the whole thing...but if you dont eat a ton of cheese I think it'll be alright...

    I am making salmon and spinach over fettucini........ I had a crazy work out today so I need some energy back in my body..... yum yum

    Mmm - sounds good you all are eating a lot better than we are tonight!! I'm still coming up short - hubby doesn't get home from work until 5 and we have to leave for swim lessons at 6 - that means I have about 30 minutes to get something together so we can eat right away. Will probably be Turkey Franks with a Micro Steam vegetable or baked chicken breasts with a vegetable. Not very exciting, but quick and easy either way!!

    I'm going to have 3 oz. lean ground beef, 1/2 cup white rice and 1/2 cup stir-fry veggies.
