Okay here is what I have been tracking.
I change it from Sedentary on weeks I am not doing much.
I go to the gym 5 days a week and burn from 1200-1400 calories
I track less than that on MFP.
When I was at 1800 and ignored excercise I was very cranky, tired and out of it.
I am now eating what MFP says and I feel better.
Should I avg what my daily needs have been now and not worry about "catching up when I get cranky?"
My normal job is Light Active.

With your stats, you should not be looking to lose more than 3 lbs per week. That's already a fast pace. The general wisdom is if you are losing more than 1% of your body weight per week you are probably sacrificing more muscle mass than you'd want to.
Whether you eat more on days/weeks you are more active, or average your calories out is really personal preference. Some people can't keep up the activity without fueling it right away, others find eating a lot more on active days throws off their will power and makes it too tough to stick to their lower cal days0
