How do you know if someone gain a goal weight?
Or does the app generate an average by my food intake etc.

I am sorry, your question is unclear. If you give the app your current stats (weight, height, age, gender,..) and what is your goal it will - based on an average person, not on what your eat on average - calculate your daily calories that you can/should eat to be able to reach that goal.1

We weigh ourselves on our home scales (or at the gym or wherever) and enter the weight into MFP. Hopefully, at some point in the future, our entered weight matches our entered goal weight.
The only calculation that the app does is a prediction of future weight (5 weeks from now as I recall), based on one day's consumption/burn. It doesn't average. And it's just a motivational message, it's not recorded anywhere.1
