My biggest issue is making sure I eat. I'm trying to meal prep a few days out but I'm running out of ideas. What's your favorite go to meal?

What I did a week or two ago was sheet pan fajitas. Onions, bell peppers and sliced chicken breasts, seasoned and roasted on a sheet pan. Then I cooked some rice and seasoned with lime zest, juice and cilantro. It was super easy and very tasty. There has been a few older thread with more meal prep ideas. YouTube is amazing for meal prep. There are several channels doing weekly videos. My fave is the Domestic Geek. See is doing tons of back to school lunch ideas right now. I hope this helps.

I tend to keep most of my meals simple - chicken or shrimp, starch (potatoes or pasta are my standard go-to); some kind of other green veg0
