IDEAS!!

So, I'm sure we all struggle from time to time with meal ideas.

My biggest struggle is thinking of something that doesn't contain a lot of carbs, so do you guys have any suggestions? Please don't state the obvious salad option haha.

    Stir fry without noodles
    lasagne using zucchini/eggplant instead of pasta
    beef or chicken stew without potatoes
    cheese stuffed, bacon wrapped chicken breast with a side of veg
    taco salad with lettuce leaf cups instead of shells
    Good old steak and veg
    Roasted chicken and veg/salad

    My favorite go to meal is a box of green giiant antioxidant blend veggies with diced chixken mixed in. The veggies have a sauce in them that goes great with chicken. Yum yum.

    cauliflower is a good substitute for rice or mashed potato. Butternut squash cut into strips and roasted can substitute for fries or wedges and is very tasty. I like roasted Mediterranean veg eg baby plum tomatoes, sliced red onion, sliced courgettes (I think they are zucchini in US), sliced sweet peppers and garlic cloves, toss in a litttle olive oil and roast slowly, delicious!

    I am on low carb and I have been saved by 2 substitutions!!! Courgette and cauliflower. I never ate/liked either veggie, til now! They are so versatile, which is what you need when food gets boring!

    So, courgette... cut off top and bottom, and use a potato peeler to make long strips of courgette (skin, flesh, seedy bits too!) Boil or steam them for a few minutes, and use this in the place of pasta! I still enjoy my bolognese, carbonara, pesto sauces etc. I particularly like this recipe: http://www.bbc.co.uk/food/recipes/courgetti_37722 (Add chicken breast to it for extra protein!)

    Cauliflower. Cook in which ever way you prefer, but make sure it doesnt go too soft and mushy. Then, lightly mash it with a potato masher or fork. It is a great rice substitute! Pour your favourite stroganoff or curry over it for a filling, satisying meal!

    You will find because these veggie alternatives are so much lower in carbs and calories you can eat like 3x the volume as rice or pasta! So, you wont starve! This week I am experimenting with cauliflower 'mash', I will keep you posted!
