Baked potato my old friend

This is far from what you're asking for, but delicious:
-Roast a sweet potato or yam, split it in half
-Layer on black beans
-Lay on some cooked kale, usually with caramelized onions
-Top with goat cheese and green goddess dressing
It's bizarre, but insanely filling and so good. Sometimes we'll also throw a fried egg on there.1 -
For several months of my weight-loss efforts, I had no potato at any time. In recent weeks I have been having potato a few times each week. I purchased a "Copper Crisper" from Wal-Mart, a small basket for cooking things in the oven to mimic an air fryer. Combining what I'd learned here about roasting vegetables, I slice potatoes and carrots into small bits and subject them to 400 F for 30 minutes to have some good eating. My old baked potato preference, which I have not reintroduced, was simply to have mass quantities of butter, salt, and black pepper. If at a restaurant, then additional mass quantities of cheese and bacon were welcome.1

I just had one for breakfast. I call it the loaded breakfast potato. I use red potatoes because they're usually smaller than russet, have fewer carbs, more fiber and are creamier. First, you cook the potato in the microwave until it softens. Cut a slit in the center and remove the guts. Place the empty potato on a light weight broil pan that has been sprayed with no stick spray and lightly salt and pepper the outside of the potato. Mix the potato innards with 1 scrambled egg and 2 egg whites, a half a turkey breakfast sausage link, a few slices of green onion and a little salt and pepper. Put 1/8 of a cup of reduced fat shredded cheese inside the gutless potato, then cram the emptied tater with the scrambled egg, sausage and potato mixture, top with another 1/8 cup of the shredded cheese. Bake it in the oven at 450 for about 10 minutes or until the cheese on top melts. Serve it topped with a tbsp of plain Greek yogurt or light sour cream. Cals: 224, C:24, F:7 P: 20 and that's for a potato that weighs 150 grams. Not as healthy as some of these people stuffing their potatoes with kale lol but it tastes good and in perspective is better for you than a loaded baked potato you would get as a side at a steak house3
